Everything I know about clothing I learned from bread, so bear with me. A good loaf is flour, water, salt and time, and the whole art is in the time. Archivio is Sergio Tacchini's word for the same idea: they go back into their own archive and bring a design out unchanged, because it was right the first time and nobody has improved on it since. That is a sourdough starter, not a new recipe.

So here is what I can put on the plate honestly. The Priorato Archivio is a track pant from that reissue programme, which means the shape and the detailing come out of the house's own history rather than off a trend board.

Sergio Tacchini founded the label in 1966 after playing the professional tour, and the reason his trousers keep coming back is that they were cut for the parts of a match nobody films — the warm-up, the changeover, the walk to the car — and those hours have not changed in sixty years.

What I will not do is invent a fabric weight for you when I have not had it in my hands, any more than I would tell you the hydration of a loaf I have only seen a photograph of. Read the label, wash it cool, and it will outlast a great deal of what is in your wardrobe.

Agri is my kind of larder. Diyadin has hot springs and travertines where the water comes up hot enough to cook in — mineral water building its own terraces, slowly, the way a good stock builds body. Ishak Pasa Palace out at Dogubayazit has kitchens in it, real ones, because a palace on that road had to feed everybody who arrived.

And Mount Ararat stands over all of it, the whole valley cooled and shaped by it, which is more or less what a mountain is for.

Nothing new. Nothing improved.
